Make either the puff pastry or sweet shortcrust pastry in the usual way, using the ingredients given. Chop the almonds coarsely, together with the currants, and mix them with the sugar.

Using flavoursome apples like Calvilles, peel and core them with an apple corer, or thin bladed knife. Fill the cores with the chopped nut mixture. Roll out the puff or short pastry thinly, and cut it into squares 15 cms (6") across. Place an apple on each square, and lifting the corners, enclose the apple, sticking the pastry together with a brush damped in cold water. Place the apple dumplings on a wetted baking sheet upside down in such a way that the tips of the pastry rest on the sheet.

Alternatively, cut the pastry into 1 1/2 cms strips and cover the apple with them, each strip slightly overlapping the previous one, starting at the top, but leaving the opening free and finally covering the opening with a cut out pastry star. This method is best applied to shortcrust pastry.

Now brush each apple with beaten egg yolk, and bake 30-35 minutes in a pre-heated 220C (450F) oven. As soon as the apples come out of the oven, sprinkle with icing sugar.
